AIR-FRYER PROTEIN GOOEY BROWNIE

Air-fryer Protein Gooey Brownie for one is been my favourite dessert so far. It is super easy to make, with a fudgy-gooey centre. Love it with some dairy-free ice cream or its own.

I have been eating this gluten-free fudge brownie for the last 4 months at least. Can you tell I love gooey fudgy brownies? I think this is perfect by far the best quick protein snack ever when you want something fast and delicious. Made in the air fryer in just 10 minutes. Also, it is low-fat, lactose-free, and sugar-free.

This single serving is perfect when you need extra protein whether for your workout or as myself – guilty of charge – I didn’t have time to eat one of my meals. But I still need that 20g of protein to keep my muscle density. although I tried to make half of the recipe once, let me tell you that wasn’t enough. That is why I decided to post it as a single serving. By all means, feel free to split it in half if you think is too much.

WHAT DO YOU NEED FOR THIS AIR FRYER PROTEIN GOOEY BROWNIE?

CACAO POWDER: for this air fryer brownie I used a mixture of Dutch-processed unsweetened/organic raw cacao powder and Intense Deep black Cacao Powder for a deep gorgeous colour and flavour.

GLUTEN-FREE FLOUR: I have tried oat flour, buckwheat flour, millet flour, sorghum flour and coconut flour. They work all great but the latter must be used carefully. Because it tents to give dry bakes if not used properly. Although I think is essential to give the best texture and fudginess to this brownie.

PROTEIN POWDER: For this, I have used my trustee (not sponsored) Isolate Whey Protein, from Biotech USA which is lactose-free, sugar-free, gluten-free, and palm oil-free. I know many people complain about the whey isolated in baking but to be honest, I love it. If you use a different type of protein, you might look out for the baking time, it could be more or less.

LIQUIDS: I have tried almond milk, fat-free lactose-free Greek yoghurt, mashed banana and unsweetened apple sauce. My favourite is the latter and the Greek yoghurt. Giving the best flavour and texture to this Air-Fryer Protein Gooey Brownie.

SWEETENERS: I suggest erythritol, monk fruit, allulose and stevia blend. But you can use any of your favourites. I also use flavour drops from my protein and bulk to sweeten and add extra flavour.

OTHERS: my favourite essence is vanilla extract, but this time I used it along with salted caramel extract, the perfect combination. Also, I used sugar-free salted caramel chocolate chips, Galaxy Enchanted mini eggs and marshmallows.

FLAVORING: As I mentioned above, I used salted caramel extract. Always add the vanilla extract as the first option and add the others as a flavouring. But you can use anything you want.

BAKING POWDER: this ingredient is optional but the outcome will be slightly different. If you leave out the baking powder you will have a more fudgy compact brownie. But if you use it the brownie will rise when baking but it will be more gooey than fudgy. Both options are great.

XANTHAN GUM: If you are using baking powder I highly suggest using the xanthan gum to give a better texture to the final result. If you decide not to go for the baking powder it is up to you to use the xantham gum or not.

BAKING DISH: I personally, use a rectangle mini casserole from the Euro store (Dollar Tree in the U.S.) because it was the only one that I have at hand, but you can use any other shape like a round, oval, square, or rectangle. Just bear in mind to achieve the same consistency it cannot be too thick or too thin the batter when spread on the mould of choice.

STEPS WHEN MAKING THIS AIR-FRYER PROTEIN FUDGE BROWNIE

  • Use baking/parchment paper on your baking dish and grease it.
  • Sieve and mix your dry ingredients well before adding the wet ingredients.
  • Mix the batter well until no dry pockets.
  • Taste for sweetness and adjust.
  • Insert a toothpick to check for doneness. Bear in mind that the brownie will keep cooking while out of the air fryer.
  • Bake in the air fryer for 10 minutes at 140C if using a 6.5-inch baking dish because the batter will be thinner bake for 8 minutes. If you choose a smaller baking dish 5 or 4 inches, the batter will be thicker so bake for 10 to 12 min. As a reference, my Air fryer’s power is 1700W. Always, check with a toothpick, skewer, or knife for the desired consistency, every air fryer is different. Some also ask for preheating, but not mine.

FAQS WHEN MAKING PROTEIN FUDGE BROWNIE

CAN I MAKE THIS GOOEY PROTEIN BROWNIE IN THE OVEN?

Yes, you can. Although, I haven’t tried it myself. Increase the time to 5 minutes and bake to 160C fan-assisted.

CAN I MAKE THIS PROTEIN GOOEY FUDGY BROWNIE IN ADVANCE?

Yes, I would suggest making it in the morning and eating it at night or one day before your intent to eat it. Just bear in mind that can lose its fudginess, however, you could warm it up in the oven at 100 C for a few minutes, and check by touching it. If it stays longer, it can get dry and not quite desirable.

CAN I SUBSTITUTE THE INGREDIENTS?

Basically, yes you can, but bear in mind that I have just tried the flours listed above in the post. And regarding protein, I only can talk about Whey isolate and pea protein. I did try beef isolate twice and it didn’t work. Although, it worked perfectly for my Double Chocolate Banana Bread.

WHY DON’T I USE ANY FAT IN THIS AIR FRYER PROTEIN BROWNIE?

Because this is a low-fat (anabolic) version of the regular brownie. So, if you are on a low-fat diet this will be perfect for you. Even though I added chocolate chips, and mini easter eggs the amount is low.

WHY DIDN’T I USE EGGS IN THIS FUDGY GOOEY BROWNIE RECIPE?

Well, I didn’t want to add more protein but the Iso Whey Zero. Also, it is a great alternative for those with egg allergies. And by using the unsweetened apple sauce has the same texture as adding eggs.

DOES THE SIZE OF MY BAKING DISH MATTER?

I would suggest trying a baking dish that is no bigger than 6 inches or smaller than 5 inches. I haven’t tried baking it in a skillet because I don’t have one so small and my tin baking trays are as well too big. You can try any other baking dish and let me know in the comments how it went.

This mouth-watering Protein Gooey Fudgy Brownie is gluten-free, lactose-free and sugar-free. Perfect for dessert or snack.

Directions

  • Grease your baking dish and set it aside.
  • In a small bowl, weigh all dry ingredients first, then whisk them to integrate them all in one.
  • Add the wet ingredients and start mixing slowly with a small spatula or spoon, I can’t stretch this enough but do it slowly and with patience. At first, you will be tempted to add more liquids but don’t do it, it doesn’t need it.
  • Then after all have come together add half the salted caramel chocolate chips, half of the marshmallows cut into little squares and half of the mini eggs, and incorporate them well into the batter.
  • Now transfer to your prepared baking dish and sprinkle the other half of chocolate chips, marshmallow tiny pieces and enchanted mini eggs halves.
  • Place into your pre-heated air fryer in the middle and bake at 140C for 6 minutes, then turn around, check with a toothpick that is still fudgy and not cakey and bake for 4 more minutes.
  • Carefully transfer the baking dish to a heatproof mate, remove the brownie from the baking paper onto a plate and enjoy with ice cream or by itself.

Notes

  • * This flavour is a suggestion because pairs well with the salted caramel chocolate chips along, and with the enchanted mini eggs (these are optional you can use any other mini eggs like Cadbury, smarties, or M&M as long they have a crunchy shell), feel free to swap the extract for vanilla.
  • ** Follow the instructions for your air fryer in case it needs to be preheated.
  • *** The water is optional because all protein, and flour brands are different so you might need more liquid or less. Also, if you want it softer or gooier as well.
